When Jessica Hanson was diagnosed with celiac disease in 2011, she didn’t wallow in in self pity, but rather decided to become a beacon of hope and inspiration in the gluten-free world. Over the last five years, Jessica has created Tasty Meditation: Tales from a Gluten Free Kitchen, where she shares deliciously-crafted gluten-free recipes, product reviews and even a listing of gluten-free friendly restaurants in NYC. Additionally, Jessica is now the head of the largest gluten-free meet-up in the county, the NYC Celiac Disease Meetup Group, and is working on a gluten-free cookbook with her boyfriend, Kristopher.
We think Jessica’s positive, and often humorous, approach to living with her disease ROCKS, and so we challenged her to come up with a gluten-free recipe featuring ProYo. Our mouths watered when we got the result back; a delicious, seasonal and balanced Baked Apples with Cinnamon Spiced Vanilla ProYo recipe. – 1 tube (4oz) of Vanilla ProYo High Protein Frozen Yogurt
– 1/2 tsp lemon juice
– 1/2 tsp (+extra) cinnamon
– 1/4 tsp (+extra) nutmeg
– 1 small apple
